Castelfranco is actually a member of the radicchio di Treviso family. It has a beautiful white head with red variegations. It can be used in the same manner as radicchio.

Season: November-March

Purchasing Tips: Look for fresh, brightly colored leaves, with no signs of discoloring or wilting. Some slight green tinges on the leaves are acceptable.

Storage: Keep refrigerated in the vegetable crisper for 3-5 days

Cooking Tips: Use raw in a salad.
